Cheeseburger Chicken

Has the title got you intrigued? Then you better try this recipe. It's one the whole family will love. I can guarantee it -- who doesn't love bacon, cheese, ranch dressing, and chicken??

2 tbsp olive oil
2 tbsp butter
6 skinless, boneless chicken breasts, split
1/3 cup soy sauce
1 tablespoon brown sugar
1/2 cup Ranch dressing
1 cup shredded Cheddar cheese
1/2 lb bacon

Preheat oven to 350 degrees. In a large skillet, partially cook the bacon until the fat has been rendered, but not so that it's completely brown. Remove from the skillet and drain on paper towels.

Drain all but 2 tablespoons of bacon grease from the skillet. Add chicken breasts, and saute 2 to 3 minutes each side, until lightly browned. Place browned chicken breasts in a 9×13 inch baking dish.

Combine the soy sauce and the brown sugar and pour over the chicken. Pour the ranch dressing over the chicken. Sprinkle with cheese.

Cut the bacon into small pieces and sprinkle over the cheese.

Bake for 25 to 35 minutes, or until chicken is no longer pink and juices run clear. (You will get better results if you use a meat thermometer.)
